Lefse
Lefse or Kling is a traditional Norwegian pastry made from potatoes and flour and shaped like a soft flatbread.

Lefse is served often smeared with butter, cinnamon and sugar. Usually made lefse of unfermented dough, but the fermented dough is also provided. Lefse kept dry after cooking, and moistened with water before use. Can also be frozen. The name lefse has many variations lepsa, lemse, Kling, etc.

Lutefisk
Lutefisk is made from dried fish or dried cod treated with lye in a special process. The fish are first put in soak in cold water for five or six days, with daily change of water. The water saturated the fish is then put to soak in cold water and lye for two days. Under this treatment the fish swells to more than its original size, while protein content is reduced by about 50% - which gives the fish its characteristic consistency.

Lutefisk is a traditional food in the Nordic countries except Denmark. The Nordic emigration to the United States has the custom of eating lutefisk also spread there.
